Easy One-Pan Lemon Garlic Chicken with Veggies (Oven + Air Fryer)

Let’s be honest—life is busy. Between work, family, and just trying to keep it all together, the last thing any of us want at the end of the day is a pile of dishes. That’s why I love a good one-pan dinner recipe. Quick to prep, easy to clean up, and still packed with flavor—this is healthy comfort food done right. Slightly messy, mostly real—just the way I like it.
This Lemon Garlic Chicken with Veggies is a recipe you’ll keep on repeat. Whether you pop it in the oven as a classic sheet pan chicken dinner or use the air fryer chicken and veggies method for even faster results, it’s a wholesome meal ready in under an hour.
Ingredients
4 boneless chicken breasts
2 cups baby potatoes, halved
1 cup baby carrots
1 zucchini, sliced
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 tsp Italian seasoning
Salt & pepper to taste
Directions (Oven – Healthy Sheet Pan Chicken Recipe)
Preheat oven to 400°F (200°C).
In a small bowl, whisk together olive oil, lemon juice, garlic, and seasoning.
Place chicken and veggies on a large sheet pan. Drizzle with marinade and toss to coat.
Bake for 25–30 minutes, or until chicken is cooked through and veggies are tender.
Directions (Air Fryer Chicken and Veggies)
Preheat air fryer to 375°F.
Toss potatoes and carrots with half the marinade. Add to basket and cook for 10 minutes.
Add chicken (coated in the remaining marinade) to the basket with the potatoes and carrots. Cook another 16–20 minutes, flipping chicken halfway.
Add zucchini during the last 10 minutes so it doesn’t overcook.
Chicken is done when it reaches 165°F and veggies are golden and tender.
